It’s true that food is one of life’s simplest pleasures, but when you pause to take a closer look, it’s the details that really make it memorable. Recently, at Lincoln Motor Company’s final 2014 Savour The City event in Montreal, guests were able to experience this in every morsel of food served at Restaurant Beatrice, and we were glad to find out more about the people behind the plates.
At Beatrice, authentic hospitality thrives in a fine dining atmosphere, where guests simultaneously feel treated and surrounded by the warmth of home. For Executive Chef Sam Maudet and Executive Pastry Chef Suyen Han, food represents happiness, unity, and family, and they work tirelessly to translate their feelings into a special moment for every patron that enters the restaurant. Both Chefs consider eating to be both an individual and collective experience, and that each plate should be designed to be uniquely appetizing.
Originally from Paris, France, Sam has been the Executive Chef at Beatrice for one and a half years. His love of food was inspired by being surrounded by the scents and sounds of food cooked by his mother at home, and the emphasis on family dinners he experienced as a child. As Beatrice’s Executive Pastry Chef, Suyen has had a lifelong interest in baking. After working in commerce and taking 10 years off to raise her children, she was ready to return to work and is thrilled to finally be pursuing her passion.
The Chefs shared passion for their work and unwavering pursuit of artistic perfection in their culinary creations leads to a distinctly unified approach to design and service at Beatrice, which inspires a sense of fulfillment for both patrons and restaurant staff. Guests come to Beatrice daily for meals, as well as major events like weddings, birthdays, and celebrations. Like these major life milestones, the Chefs believe food should embody meaning and bring people together in a celebration of life with each bite.
Both chefs believe that family is the foundation of society and delicious meals, so they strive to create this atmosphere at Beatrice. The philosophy that Sam and Suyen bring to every plate at Beatrice is to never let go of your roots – they shape your outlook on the world, foster your passion, and allow you to create unexpected and exceptional moments for others.
